Easy lentil salad with za’atar dressing
Simple, light and refreshing lentil salad, bursting with delicious flavors. You can add as much or as little of any of the ingredients to adjust to your preference.
Ingredients
11/2 cups green/puy or brown lentils
1 large cucumber, peeled and diced
1 medium tomato, chopped
1 scalion, finely chopped
Dressing
Olive oil, 4 tbsp
Garlic, 1 clove, minced
Salt, to tate
Pepper, to taste
Za’atar seasoning, 2 tbsp (or more, if you like)
Ground cayenne, 1 tsp
Fresh lemon juice, to taste
Instructions
Rinse lentils (brown or puy) and cook in a large bowl of water for about 15 minutes, until the lentils are tender but still holding shape.
Drain the lentils into a colander and set them aside to cool
Meanwhile, dice the cucumber, tomato and scallion
Once the lentils have cooled down, stir in the diced cucumber and chopped tomato & scallions
In a small bowl, whisk together the olive oil, garlic, salt and pepper, ground cayenne and the za’atar seasoning.
Stir in the lemon juice
Add the dressing to the lentils. Sprinkle some freshly chopped parsley, mix well & serve
