Caramelized bits of shredded cabbage, mildly spiced with cumin and chili powder with a hint of sweetness from a small amount of sugar - a perfect side dish that can be prepared in under 30 minutes! So good!
I’ve adapted my mom’s recipe by replacing a neutral oil with sesame oil. Feel free to use any variety that you like.
Ingredients
1 tbsp sesame oil
4-5 cups of shredded cabbage (Cut the cabbage in half, place the cut-side down and then thinly slice them around the core)
1 cup of frozen peas
1 tbsp cumin seeds
1 tomato, chopped
1 tsp ground turmeric
Chili powder (as needed) (You may use paprika, cayenne etc)
Salt, to taste
2 tsp sugar .or grated jaggery

Instructions
In a large skillet over medium-high, toast the cumin seeds in the sesame oil, until fragrant, stirring constantly
Combine the shredded cabbage, frozen peas, ground turmeric, ground cayenne and salt into the pan and cook covered for 3-4 minutes
Uncover the skillet, stir well once again, sprinkle some water if it appears too dry and cover, reduce heat and continue to cook for another 8-10minutes, stirring once in between
Uncover and continue to cook, stirring occasionally for a minute, making sure all the water (if any) has been absorbed. BY this time, the cabbage would be tender and slightly brown
Add the chopped tomato, sugar/jaggery, stir until well combined and cook for another 7-10 minutes until the tomato pieces appear wilted
Turn off heat. Check for seasoning and doneness.
Serve as a side with some rice and dal, or flat bread .
*The cabbage will take up a lot of room in the pan but after a few minutes, it will cook down pretty quickly
*A good addition to this is cubed potatoes, Simply chop and add some potatoes along with the cabbage and cook them all together by following the instructions above.
