Haricots Verts with Cherry Tomatoes, Walnuts and Vegan Feta

Simple, delicious and quick!

Serves 4
Ingredients
1 lb haricot vert, ends trimmed 3 Tbsp olive oil
4 cloves of garlic, minced
1 small onion, thinly sliced
1 pint cherry tomatoes
2 Tbsp fresh lemon juice
Salt, to taste
Black pepper, as needed
1 cup toasted unsalted walnuts, coarsely chopped
1 cup crumbled vegan feta

Directions
Bring a large pot of lightly salted water to a boil.

Add the haricot vert and cook until tender, tossing occasionally, but should still have a slight crisp, about 6 minutes.

Remove the haricot vert from the salted water using a pair of tongs and set aside

In a large skillet or 12 over medium-high, heat the olive oil, add the garlic and sauté until the garlic begins to brown, about 1 minute

Stir in the onion slices, sauté for about 3 minutes on medium-high, stirring often.

Add cherry tomatoes, black pepper and a pinch of salt to the pan and cook for 1 minute, over medium high heat, until tomatoes just begin to heat on the surface.

Turn off heat

In a serving bowl, gently toss the haricot vert with the tomato-onions, lemon juice, top with crumbled feta, toasted walnuts

Serve hot or at room temperature
