Little Gem Lettuce Salad with Tahini Dressing

As festive as it is delicious, this easy salad brings together the red, white, and the green. The pistachios, and the pomegranate arils transform this simple lettuce-based salad into a special dish.

Ingredients

2 gem lettuces, leaves separated

2 celery stalks, sliced

Unsalted toasted pistachios, roughly chopped, as needed

Pomegranate arils, as needed

Freshly ground black pepper, as needed

For the dressing

1/2 cup tahini

1 small clove of garlic, minced

1 Tbsp lemon juice

Salt, to taste

Directions

To make the dressing, pour the tahini in a bowl, add lemon juice.

Add about 1/4 cup of cold water, and continue to whisk to make the sauce thinner.

Stir in salt, minced garlic.

Adjust the seasoning, and consistency, if required.

For the salad assembly, start by arranging the lettuce leaves in a single layer on a large platter.

Scatter the celery on top.

Pour the dressing over the leaves, season with some salt, and freshly ground black pepper.

Sprinkle the pomegranate arils, toasted pistachios.
