You will love this super-easy, exotic twist on the classic french toast. I do not enjoy sweet dishes, especially for breakfast, but I devoured this one! It checks all the right boxes, color, taste, texture, and smells aaaaamazing. I made them using my homemade Italian style bread, but you could use any variety that is a day old. Quoting my daughter, “This is what serious breakfast and dessert dreams are made of.” Try this one ASAP!

Serves 3-4
Ingredients
1 cup plant milk
1 Tbsp corn starch
1 Tbsp ground flaxseeds
1 tsp ground cinnamon
1/2 tsp baking powder
1 tsp vanilla
1 tsp saffron
1 Tbsp maple syrup
6-8 thick slices of bread
4 tsp unsalted vegan butter for cooking
3/4 cup toasted unsalted pistachios in a shallow plate

To serve - fresh fruits, maple syrup, vegan whipped topping

1. Whisk together the milk, cornstarch, baking powder, ground flaxseeds, cinnamon, maple syrup, saffron, and vanilla in a bowl and set aside for 5 minutes

2. Heat a non-stick or cast iron skillet to medium-low, and add some butter to coat the skillet. Dip the bread in the batter and let soak for about 20 seconds, then lift slowly, gently shaking off the excess, then place the bread slice into the pistachios, coating it on all or one side

3. Repeat with more slices, depending on the size of your pan, and place the bread slices in the hot skillet

4. Cook the bread slices for about 3 minutes, or until browned, flip and cook for another 3 minutes. Make sure the pistachios don’t get burned

5. Transfer to a serving place. Serve immediately with some maple syrup, fresh fruits and dairy free whipped topping
