Rustic Bruschetta
Italian food is simple, with distinctive flavor, which focuses on the purity of the ingredients. The success of bruschetta is based mainly on the flavor of the key ingredient which is tomatoes. I had plenty of fresh, juicy cherry tomatoes and I had to recreate the rustic bruschetta I had in San Gimignano a small Tuscan town. Warm slices of perfectly crisp, toasted bread, fresh tomatoes, garlic, olive oil, and salt. That’s it! Nope, no fresh basil. It’s that simple. The taste, insanely delicious!
Ingredients:
Slices of bread (thick)
1-2 cloves of fresh garlic, peeled
Good extra virgin olive oil, as needed
Fresh ripe tomatoes, as needed (I use about 10-12 cherry tomatoes, halved or quartered
Salt, to taste
Directions:
Grill the bread, then immediately rub the garlic on one side
Place the tomato slice on top of the bread
Drizzlewith olive oil
Sprinkle with a dash of salt
Enjoy!
*Use any flavorful ripe tomato. Ripe is key.
*Any rustic bread is good. I like leftover ciabatta
