I love how tofu blends seamlessly into a variety of foods, including, as a substitute for non-vegan ingredients. It takes on the flavor of whatever it is seasoned or cooked with. Here, tofu adds substance, nutrition, and texture to the sandwiches as a whole.

Makes about 4 large sandwiches

To a mixing bowl, add 1 small, finely chopped green bell pepper, 1 cup crumbled extra firm tofu, 2 finely chopped jalapeños (more if you like it spicier), pinch of salt, 1/2 tsp fresh lemon juice, freshly ground pepper, 2 cloves of minced garlic, 1/4 cup finely chopped cilantro. Mix well.
In a small skillet, heat the tofu mixture, stirring constantly, for about 3-5 minutes on medium heat. Set aside
Preheat a cast iron skillet while you assemble the sandwiches.
Take a slice of sourdough bread, spoon a generous amount of tofu mixture on to the slice of bread, add some dairy free shredded mozzarella and cover with another slice. Apply some dairy free-butter (I use dairy free floraplantus) on the both slices, on the sides that will hit the pan, and toast on medium-low heat, until crisp & golden brown on both sides. You can place another medium skillet or plate on top of the sandwich, then weight it down with cans to get the cheese to melt more evenly.
Serve immediately! Best with sriracha!
