Do you love curries? What about scrambled eggs on toast? If you’ve answered yes to the questions, then you will love this vegan version - curried scrambled tofu on toast, that is sort of like “egg bhurji”. This savory breakfast hits all the right notes - it is perfectly seasoned, has a wonderful texture and so satisfying.

For the scrambled tofu
Serves 2
Ingredients
1 tsp of oil or vegan butter
2 cloves of garlic, minced
4 scallions, finely chopped
1 jalapeño, finely chopped
1/2 block of extra diem tofu, drained and crumbled
Salt and pepper, to taste
1 tsp black salt/kala namak (optional)
1 tsp curry powder (or use as needed)
1/2 tsp ground turmeric
Chives, chopped, as needed
Fresh lemon juice, as needed

Instructions

  1. Heat a skillet and tsp of oil and sauté the garlic for 15 seconds on medium heat.

  2. Add the scallions, jalapeños and sauté for a minute

  3. Add the crumbled tofu, salt, pepper, and sauté for 2-4 minutes, stirring occasionally

  4. Stir in the curry powder, black salt, ground turmeric and continue to sauté for 10 minutes, stirring often

  5. .Turn off heat, stir in the chives and lemon juice

  6. Sprinkle with an additional grind of black pepper and serve immediately

    For the toast
    Toast the bread slices, spread a thin layer of vegan cream cheese/vegan butter, top with the scrambled tofu, avocado slices, greens, tomatoes and hot sauce
