Noodles with veggies and simple sauce
Serves 4
Ingredients:
Dried noodles, 16 oz
Salt, to taste
Oil 2 tsp
Sesame oil 1 tbsp
Garlic 1 tbsp, freshly grated
Ginger 4. Cloves, minced
Green chili peppers, any variety you prefer, finely chopped (I used 1 Thai chili)
Scallions, 4-5, chopped
Onion, 1 medium size, sliced
Bell pepper, as needed, cut into strips
Carrots, as needed, cut into strips
Cabbage, as needed, cut into long strips
Soy sauce, about 2 Tbsp
Chili-garlic sauce - as needed
Rice wine vinegar, 1 tsp
Liquid sweeter or sugar, as needed (I used 1 Tbsp agave)
Salt, to taste
Ground white pepper, 1 tsp
Directions
- Cook the noodles according to the instructions on the package. Drain the noodles into a colander and rinse under running water
- Drizzle a tsp of oil to coat the noodles and set them aside
- Heat a large skillet on high, add sesame oil, chopped garlic, ginger, scallions, chili pepper, and sauté for 30 seconds
- Add the onion and sauté for a minute
- Add the bell pepper, cabbage, carrots and continue to sauté for 2 minutes, stirring continuously
- Toss in the cooked noodles and stir in the soy, chili garlic paste, liquid sweetener, vinegar, salt and white peppers & stir well to combine making sure the noodles are coated well in the sauce
- Serve hot with some scallion greens
